Black rice, known as forbidden rice, has many regional names—Chak Hao in Manipur, Kavuni Arisi in Tamil Nadu, Pirurutong in the Philippines, and Venere rice in Italy. Celebrated globally, it’s a superfood packed with flavor and nutrition!
Payasam/Kheer Recipe:
- Soak ½ cup black rice for 2-3 hours and pressure cook with 2 cups water for 4-5 whistles.
- Add 4 cups milk and crushed cardamom, then simmer for 10-15 minutes, stirring occasionally.
- Mix in ¼ cup sugar and 1 tbsp condensed milk (optional), then cook for 5 minutes until creamy.
- Serve warm or chilled. Garnish with nuts or saffron (optional) and enjoy!
